A different spin from the ordinary everyday burrito. These are very good with lots of different flavors all rolled together. Enjoy

Ingredients
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 2 tablespoons water
  • 1 pound medium shrimp shelled and deveined
  • 6 large flour tortillas
  • 4 cups cooked basmati rice
  • 15 ounce can black beans rinsed and drained
  • 2 cups panela cheese crumbled
  • 1/2 cup queso fresco cheese crumbled
  • Cilantro leaves
  • Fresh salsa

Directions
  1. Combine soy sauce, lime juice and water in large heavy plastic bag.
  2. Add shrimp and marinate in refrigerate for 30 minutes.
  3. Grill or broil shrimp for 8 minutes.
  4. Warm tortillas in oven.
  5. Top with shrimp, rice, beans and crumbled cheeses.
  6. Add a few cilantro leaves and salsa.
  7. Roll-up and serve.
