SausageSpinach Lasagna Recipe
This is a little twist to traditional lasagna. It was taught to me by my mother who learned it from a wonderful Italian cook.

Ingredients
  • 2 Jimmy Dean sausages, one spicy, one regular
  • 1 package Oven-ready lasagna (unless you want to take the time to make your own)
  • 2 packages of frozen spinach souffle
  • 1 1/2 tubs of ricotta cheese
  • 1 1/2 jars of your favorite spaghetti sauce
  • 1 large bag of low-fat mozzerella cheese

Directions
  1. Cook sausage in skillet until brown; drain
  2. Mix together ricotta cheese and heated spinach in a medium bowl.
  3. Spray an 11 x 8 (or about those measurements if you don't have exact) glass dish with non-stick spray
  4. Lay down one layer of oven-ready lasagna
  5. Top with one layer of spaghetti sauce
  6. Next lay down ricotta/spinach mixture
  7. Sprinkle a layer of cooked sausage
  8. Cover with a thin layer of cheese.
  9. Repeat steps 4-8
  10. Cover Pan with tin foil and bake at 350 for about 35-40 minutes.
  11. Check to make sure noodles are tender. Uncover and add a little more cheese. Bake for another 10-15 minutes or until cheese is bubbly.
