Rigatoni Pizza Stew Recipe
A delicious and easy to prepare casserole. Serve with a salad and garlic bread. Found in a Betty Crocker cookbook

Ingredients
  • 1 pound Italian sausage links cut into 1/4 inch slices (use turkey Italian sausage for a lower fat content if desired)
  • 1 can (14 1/2 oz) Italian-style stewed tomatoes, undrained
  • 1 can beef broth
  • 1 c. water
  • 1/4 c. Italian-style tomato paste
  • 1 medium onion, coarsely chopped
  • 2 medium carrots cut into 1/2 inch slices (1 cup)
  • 1 1/2 c. uncooked rigatoni pasta
  • 1 medium zucchini cut lenthwise in half then cut into 1/4 inch slices
  • 1/2 c. shredded mozzarella cheese

Directions
  1. Spray a 4 qt. Dutch oven with cooking spray. Cook sausage in Dutch oven over medium heat about 8 minutes until no longer pink inside., drain.
  2. Stir tomatoes, broth, water, tomato paste, onion and carrots into the sausage. Heat to boiling reduce heat to medium-low. Cook about 10 minutes until carrots are tender.
  3. Stir in pasta and zucchini. Cook 10-12 minutes, stirring occassionally, until pasta is tender. Serve topped with Cheese.
