Rigatoni Pizza Stew

A delicious and easy to prepare casserole. Serve with a salad and garlic bread. Found in a Betty Crocker cookbook
Ingredients
- 1 pound italian sausage links cut into 1/4 inch slices (use turkey italian sausage for a lower fat content if desired) shopping list
- 1 can (14 1/2 oz) Italian-style stewed tomatoes, undrained shopping list
- 1 can beef broth shopping list
- 1 c. water shopping list
- 1/4 c. Italian-style tomato paste shopping list
- 1 medium onion, coarsely chopped shopping list
- 2 medium carrots cut into 1/2 inch slices (1 cup) shopping list
- 1 1/2 c. uncooked rigatoni pasta shopping list
- 1 medium zucchini cut lenthwise in half then cut into 1/4 inch slices shopping list
- 1/2 c. shredded mozzarella cheese shopping list
How to make it
- Spray a 4 qt. Dutch oven with cooking spray. Cook sausage in Dutch oven over medium heat about 8 minutes until no longer pink inside., drain.
- Stir tomatoes, broth, water, tomato paste, onion and carrots into the sausage. Heat to boiling reduce heat to medium-low. Cook about 10 minutes until carrots are tender.
- Stir in pasta and zucchini. Cook 10-12 minutes, stirring occassionally, until pasta is tender. Serve topped with Cheese.
