- 3/4 cup sugar shopping list
- 2 1/2 cup 35% cream shopping list
- 1/3 cup milk shopping list
- 1/3 cup espresso shopping list
- 6 yolks eggs shopping list
How to make it
- Preheat oven to 300ºF.
- In a saucepan, warm the 35% cream, milk, espresso and ½ cup of sugar until the sugar dissolves.
- In a mixing bowl whisk the egg yolks and 1/4 cup of sugar.
- Add the warm cream to the yolk mixture a little at a time so not to scald the eggs.
- Once all is mixed pour into ramekins (or tea cups)
- Place the ramekins in a water bath and cook for approximately 45 to 55 minutes.
- Chill and serve.
