How to make it

  • Preheat oven to 300ºF.
  • In a saucepan, warm the 35% cream, milk, espresso and ½ cup of sugar until the sugar dissolves.
  • In a mixing bowl whisk the egg yolks and 1/4 cup of sugar.
  • Add the warm cream to the yolk mixture a little at a time so not to scald the eggs.
  • Once all is mixed pour into ramekins (or tea cups)
  • Place the ramekins in a water bath and cook for approximately 45 to 55 minutes.
  • Chill and serve.
