Ingredients
  • 3/4 cup sugar
  • 2 1/2 cup 35% cream
  • 1/3 cup milk
  • 1/3 cup espresso
  • 6 yolks eggs

Directions
  1. Preheat oven to 300ºF.
  2. In a saucepan, warm the 35% cream, milk, espresso and ½ cup of sugar until the sugar dissolves.
  3. In a mixing bowl whisk the egg yolks and 1/4 cup of sugar.
  4. Add the warm cream to the yolk mixture a little at a time so not to scald the eggs.
  5. Once all is mixed pour into ramekins (or tea cups)
  6. Place the ramekins in a water bath and cook for approximately 45 to 55 minutes.
  7. Chill and serve.
