Grilled Lamb Recipe
This grilled lamb is easy to do and one of my favorites!!! This does require the meat to marinate overnight. Very little clean up for something so good!

Ingredients
  • 1 butterflied leg of lamb (5 lbs.)
  • 1 piece of sliced ginger root (1/2 inch)
  • 2 cloves minced garlic
  • 2/3 c. lemon juice
  • 1/2 c. of brown sugar
  • 1/4 c. Dijon mustard
  • 1 tsp. salt
  • 1/2 tsp black pepper
  • 1/4 c. soy sauce
  • 1/4 c. olive oil

Directions
  1. In a medium bowl combine all ingredients together until well mixed. Place lamb in a shallow dish and pour the contents of the bowl on to it. Cover with a lid or plastic wrap and allow this to marinate in the refrigerator for 8 hours or until ready to cook.
  2. Preheat your grill to medium heat. Pour marinade into a small saucepan and bring to a slow boil. Reduce heat to simmer and stir the mixture constantly until thickened.
  3. Lightly oil the grill and place lamb over indirect heat, rotating to all sides for 40-50 minutes or until the temperature of the meat has reached 145 degrees F. Let the lamb cool before slicing and pour the thickened marinade over and serve. Enjoy!!!!
