Harvard Beets

- 1 can sliced beets (Reserve juice) shopping list
- 1/2 med onion (sliced) shopping list
- 1 T. cornstarch shopping list
- 2 T. sugar shopping list
- 1/2 tsp. salt shopping list
- 2/3 C. reserved juice and water shopping list
- 1/4 C. vinegar shopping list
- Dash of pepper shopping list
How to make it
- In saucepan, stir together cornstarch, sugar, salt and pepper.
- Stir in vinegar and combined beet juice and water. Cook, stirring constantly, until mixture thickens and boils.
- Boil and stir 1 min.
- Add beets and onion and heat through.

I usually add just a bit more sugar, but these are sooooooooo good, my mom always called them sugar spiced beets... they are worth a 5
