Red Bell Peppers Stuffed With Taco Goodies

- 3 large red bell peppers shopping list
- 1 pound lean ground beef shopping list
- 1 envelope taco seasoning mix shopping list
- 1/2 cup water shopping list
- 3 tablespoons tequila shopping list
- 1 cup finely chopped red onion shopping list
- 2 fresh jalapenos finely chopped shopping list
- 3/4 cup cooked rice shopping list
- 10 ounce can enchilada sauce shopping list
- 1 cup taco sauce shopping list
- 1 cup shredded sharp cheddar cheese shopping list
- Shredded lettuce shopping list
- chopped tomatoes shopping list
How to make it
- Remove and discard thin slice from tops of peppers.
- Remove seeds from inside and cut peppers in half lengthwise.
- Drop pepper halves into boiling salted water and cook 3 minutes.
- Remove and drain on paper towels.
- Preheat oven to 350 then spray rectangular glass baking dish with non-stick cooking spray.
- In large skillet brown beef then drain well.
- Stir in taco seasoning then add water and tequila and mix well.
- Bring to boil then lower heat and simmer 20 minutes stirring occasionally.
- Remove from heat then stir in onions, chilies and rice.
- In small bowl combine enchilada sauce and taco sauce then stir 1/4 cup into meat mixture.
- Return meat mixture to medium heat then cover and cook 5 minutes stirring occasionally.
- Heap meat mixture onto pepper halves then place into prepared baking dish.
- Pour remaining sauce mixture over and around stuffed peppers.
- Cover tightly with foil and bake 20 minutes.
- Remove foil then sprinkle cheese evenly over peppers and continue baking 10 minutes.
- Transfer peppers to large serving platter and surround with lettuce and tomatoes.
