Ingredients
  • 3 to 4 tomatoes, cored and cut into 3/4-inch cubes
  • 1 small sweet onion, finely diced
  • 2 tablespoons seasoned rice vinegar
  • 1 1/2 teaspoons balsamic vinegar
  • 2 tablespoons minced fresh basil
  • Salt and pepper

Directions
  1. Combine tomatoes and sweet onion. Add vinegars. Mix lightly. Let stand for 10 minutes. Add basil. Season with salt and pepper to taste. Serve at room temperature.
  2. Serving quantity: Serves 4.
