Mesquite Beef Brisket Recipe

Ingredients
  • 8 lbs. of beef brisket
  • 15 cloves peeled garlic
  • 1/4 c. Greek Style seasoning

Directions
  1. Take the brisket and make deep cuts into the meat but not all the way through. Place the peeled garlice into the cuts. Generously sprinle the Greek Seasoning over the meat.
  2. Place a piece of mesquite wood over hot coals (they should look gray in color).
  3. Place the brisket fat side down onto the hot grill for 2 hours, making sure not to turn it during this time.
  4. Preheat the oven to 250 degrees. Take the meat and wrap tightly several times in heavy duty aluminum foil and palce on a cookie sheet in the oven for 2 more hours.
  5. Once this is done remove the meat from the oven and allow it to sit (still in its foil) and cool for 30-60 mintues allowing the juices to absorb and the meat to firm up. Slice and enjoy!
