Zesty Cheese Ravioli

- ½ c water shopping list
- 1 14.5 oz. can no-salt added diced tomatoes, undrained shopping list
- or about 5 plum tomatoes diced shopping list
- 1 garlic glove or to taste shopping list
- 1 (9 ounce) pkg fresh four cheese ravioli shopping list
- 2 Cups finely chopped fresh spinach, rib removed or use baby spinach shopping list
- 1/8 tsp sugar shopping list
- 1/8 tsp pepper shopping list
- 1 Tbl grated Parmesan shopping list
How to make it
- Combine first 3 ingredients in a large saucepan and bring to a boil
- Add Ravioli, cover and cook for 5 minutes, stirring occasionally. Uncover and cook additional 5 minutes or until ravioli is done.
- Stir in spinach, sugar, pepper; cover and cook 2 minutes stirring occasionally. Remove from heat and let stand, covered, 5 minutes.
- Sprinkle each serving with Parmesan
- Yield: 2 servings (2 cups pasta mixture and 1 ½ tsp cheese)

I love the simple fact that this recipe is from that long ago...I will save to try....thanks - I will often make myself ravioli when no one is around and I need a ravioli fix...its got my five raviolis all over it!
