Ingredients
  • ½ c water
  • 1 14.5 oz. can no-salt added diced tomatoes, undrained
  • or about 5 plum tomatoes diced
  • 1 garlic glove or to taste
  • 1 (9 ounce) pkg fresh four cheese ravioli
  • 2 Cups finely chopped fresh spinach, rib removed or use baby spinach
  • 1/8 tsp sugar
  • 1/8 tsp pepper
  • 1 Tbl grated Parmesan

Directions
  1. Combine first 3 ingredients in a large saucepan and bring to a boil
  2. Add Ravioli, cover and cook for 5 minutes, stirring occasionally. Uncover and cook additional 5 minutes or until ravioli is done.
  3. Stir in spinach, sugar, pepper; cover and cook 2 minutes stirring occasionally. Remove from heat and let stand, covered, 5 minutes.
  4. Sprinkle each serving with Parmesan
  5. Yield: 2 servings (2 cups pasta mixture and 1 ½ tsp cheese)

I love the simple fact that this recipe is from that long ago...I will save to try....thanks - I will often make myself ravioli when no one is around and I need a ravioli fix...its got my five raviolis all over it!
