Ingredients

How to make it

  • In large skillet, heat oil and saute' onion, celery
  • Saute until onion is transparent
  • Remove to another dish
  • In same skillet saute' barley and rice
  • Watch closely, do not allow to burn or brown, just cook 3 minutes
  • Add boiling water or stock to barley and rice
  • Add onions, celery and remaining ingredients
  • Cover and SIMMER on low heat for about 1 hour
  • Stir mixture carefully, replace lid, remove from heat
  • Let stand for 15 minutes
  • Serve

    Thought I did but didn't have any almonds so I put in 1 teaspoon almond extract.

    Eyeballed my cinnamon container and thought I had just a teaspoon left, so I dumped the contents. Turned out to be on the overflow side of a tablespoon. Hope that doesn't make the recipe intolerable.

    EDIT: Dish turned out well. Something wrong with my brown rice. I think the manufacturer didn't do a good job separating all of the chaff from the rice. My fault for buying cheap.
