Absolutely delicious! It has become a firm favourite over night. I served it with a creamy mashed potato and a glass of wine. It's the perfect dish to serve family and friends alike.

Ingredients
  • 1 glass of white wine
  • 6 slices of streaky bacon , chopped
  • oil
  • a pinch of chilli flakes
  • 1 large leek , sliced
  • 2 c. chicken stock , fresh, cube or concentrate,
  • 1 garlic clove , sliced
  • a small bunch of parsley , roughly chopped
  • 6 sausages (spicy ones, Toulouse are good)
  • 2 cans of butter beans , drained and rinsed

Directions
  1. Brown the sausages in a little oil.
  2. Slice into chunks.
  3. Brown the bacon in the same pan then add the leeks and garlic and cook till softened.
  4. Add back the sausages, the wine, stock and chilli flakes, and the butter beans.
  5. Simmer for 10-15 minutes until the sausages are cooked through. Season and add the parsley.

I have to think if I like butter beans..but I don't think it would matter with all the great taste surrounding it with your other ingredients. This has to be healthy...Nice Mystic =)
