Ingredients
  • 4 Large Baking Potatoes
  • 1/2 Large Cooking Apple. I usually use Bramleys
  • 1 oz. Margarine or butter
  • 1 Large Onion - finely chopped
  • 4 Sage Leaves - chopped - or Dried Sage if fresh not available
  • 1/2 Teaspoon of Mustard Powder
  • Salt to taste
  • Margarine for greasing pan

Directions
  1. Cook the Potatoes - You can either boil or cook in the Microwave
  2. Cut in half - lengthwise.
  3. Scoop the potato out and mash up well in a basin
  4. Peel, core and finely chop the apple
  5. Peel and finely chop the Onion
  6. Melt Margarine or Butter in a frying pan
  7. Fry the onion gently,,
  8. Stir in the apple and cook for a further 2 - 3 minutes till soft.
  9. Mix the apple and onion mixture with the Potato mash
  10. Add the Sage, Mustard and Salt
  11. Spoon back into the Potato shells
  12. Put onto a greased shallow oven dish or tin
  13. Place in oven and Bake for 15 minutes.
