This recipe is adapted from one in the book What's Cooking: Baking by Emma Patmore. It's a homey, tasty oatmeal cookie that has become a regular in my kitchen.

Ingredients
  • 4 T butter
  • 1/2 cup sugar
  • 1 egg, beaten
  • ½ cup all purpose flour
  • ½ tsp salt
  • ½ tsp baking powder
  • 1 ½ cups old fashioned rolled oats
  • ¾ cup plump raisins
  • 2 T sunflower seeds

Directions
  1. Line 2 cookies sheets with parchment paper.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the beaten egg gradually and beat until well combined.
  4. Sift the flour, salt and baking powder into the creamed mixture. Mix well
  5. Add the oats, raisins, sunflower seeds and mix together thoroughly.
  6. Place spoonfuls of the mixture well apart on the prepared cookie sheets and flatten them slightly with the back of a spoon.
  7. Bake the cookies in a preheated oven at 350F for 10-12 minutes, until lightly browned.
  8. Let the cookies coo slightly on the cookie sheets.
  9. Transfer the cookies to a wire rack and cool completely before serving.
  10. Makes 16-18 cookies.
