Dairy Free Chocolate Pudding

Ingredients
  • Dairy Free Substitute for Sweetened Condensed Milk:
  • • ¾ cup Organic Sucanant Sugar or Organic evaporated cane sugar
  • • ½ cup Water
  • • 1 cup plus 2 Tablespoons of Soy Milk Powder
  • Chocolate Pudding:
  • One package Organic Tofu
  • 8 tablespoons Cocoa
  • 1 teaspoon vanilla
  • 1 cup Dairy Free Sweetened Condensed Milk Substitute from above.

Directions
  1. Make the Dairy Free Sweetened Condensed Milk Substitute first by
  2. Combining all ingredients in a saucepan, and bring to a boil. Reduce heat and cook until thick, about 15 to 20 minutes. Cool before using. May be stored in the refrigerator.
  3. Pudding:
  4. Combine all ingredients into a food processor and blend for 30 seconds
  5. Scrape down bowl and process until smooth
  6. Refrigerate for 2 hours and serve
