Twice Cooked Chicken Recipe
This chicken is exta crisp and yummy. It taste fried but it is really baked.

Ingredients
  • 3 lb. chicken pieces (I use chicken leg quarters)
  • 1 1/2 cups flour
  • 1 1/2 TBS cajun seasoning (see posted recipe)
  • oil for browning chicken

Directions
  1. Measure flour and seasoning and put in zip lock bag. Put a small amount of oil in skillet and heat to 350 degrees. Put chicken parts in bag with flour and shake vigorously. Meanwhile heat oven to 375 degrees.
  2. Fry chicken in oil until ligtht brown on all sides, about 8 minutes on each side.
  3. As chicken browns place on foil lined baking sheet sprayed with cooking spray.
  4. Place chicken in preheated oven for one hour or until crisp and internal temp is 190 degrees.
  5. And enjoy. Nice and crisp without all the extra grease.
