I found this recipe years ago in a little magazine. I've changed it somewhat but it is delicious with salmon or other fish. The salsa isn't cooked and the texture of the crunchy is really nice with the fish.

Ingredients
  • 4 salmon steaks
  • 1 large red pepper, cut into 1/2" chunks
  • 1 cup of fresh or frozen corn, cooked and cooled
  • 1/4 cup of red onion, minced
  • 1 Tbsp Cajun spice
  • 1 Tbsp Grilling Spice- I use something with lots of pepper in it
  • 2 Tbsp lemon juice
  • 1 Tbsp honey
  • 1 Tbsp olive oil
  • 1/4 cup of chopped cilantro

Directions
  1. Preheat oven to 400 degrees
  2. Combine red pepper, corn, onion, the Cajun spice, lemon juice, olive oil, and honey.
  3. Mix well and refrigerate
  4. Spray salmon with olive oil and sprinkle with the Grilling spice.
  5. Place steaks on foil lined baking sheet and roast in oven for 10-12 minutes or grill each steak 5-6 minutes per side on a medium high grill.
  6. Finely chop the cilantro and add to corn mixture and serve over cooked salmon.
