Baked Sweetpotato Pudding

- 4 medium sweet potatoes shopping list
- 3/4 C. brown sugar shopping list
- 1 tsp. salt shopping list
- 1/4 C. butter shopping list
- 2 eggs, slightly beaten shopping list
- marshmallows shopping list
How to make it
- Peel, cut and cook sweet potatoes in water, 25-35 minutes.
- Drain and mash or blend with a hand blender.
- Mix in sugar, salt, butter and eggs.
- Pour into an 8x8 baking dish.
- Cook, uncovered in a 350 degree F oven for 30-35 minutes.
- Top with marshmallows and bake for another 5 minutes or until marshmallows are lightly browned and melty.
- Note: Don't use too many marshmallows like I did the first time and have to clean melted/charred marshmallow out of the bottom of your oven. Just a nice sprinkling will do.
