Baked Sweetpotato Pudding Recipe

How to make it

  • Peel, cut and cook sweet potatoes in water, 25-35 minutes.
  • Drain and mash or blend with a hand blender.
  • Mix in sugar, salt, butter and eggs.
  • Pour into an 8x8 baking dish.
  • Cook, uncovered in a 350 degree F oven for 30-35 minutes.
  • Top with marshmallows and bake for another 5 minutes or until marshmallows are lightly browned and melty.
  • Note: Don't use too many marshmallows like I did the first time and have to clean melted/charred marshmallow out of the bottom of your oven. Just a nice sprinkling will do.
