Pistachio Crusted Chilean Sea Bass

- 2- 6 oz Fillets of Chilean sea bass shopping list
- 1/2 C Unsalted Chopped pistachios shopping list
- 3 Tbsp olive oil shopping list
- juice of 1 lime shopping list
- salt & pepper to taste shopping list
- **You can find unshelled pistachios in your local grocery store shopping list

How to make it
- Pre heat oven to 350 degrees F
- Place pistachios in shallow dish
- Place fish in second shallow dish
- Squeeze juice of lime onto fish
- Drizzle with 1 Tbsp of olive oil
- Season with salt & fresh ground pepper
- Be sure to roll fish around in order to coat both sides, let stand for about 20 minutes
- Press fish into ground pistachios on one side
- Heat olive oil in oven proof skillet until very hot but not smoking
- Place fish in skilet nut side down to sear, about a mnute or two
- Turn fish over and bake in oven for about 15 - 20 minutes or until done

I served this a few weeks ago to my wife and son. We all loved this tasty dish. I particularly liked the contrast of the crispy outside coating and the tender juicy white clean tasting fish. The flavors blended perfectly. Will make it again.
