  • 2- 6 oz Fillets of Chilean Sea Bass
  • 1/2 C Unsalted Chopped Pistachios
  • 3 Tbsp Olive Oil
  • Juice of 1 Lime
  • Salt & Pepper to taste
  • **You can find unshelled pistachios in your local grocery store
  • *** Chop nuts in mini food prep (processor)

Directions
  1. Pre heat oven to 350 degrees F
  2. Place pistachios in shallow dish
  3. Place fish in second shallow dish
  4. Squeeze juice of lime onto fish
  5. Drizzle with 1 Tbsp of olive oil
  6. Season with salt & fresh ground pepper
  7. Be sure to roll fish around in order to coat both sides, let stand for about 20 minutes
  8. Press fish into ground pistachios on one side
  9. Heat olive oil in oven proof skillet until very hot but not smoking
  10. Place fish in skilet nut side down to sear, about a mnute or two
  11. Turn fish over and bake in oven for about 15 - 20 minutes or until done

I served this a few weeks ago to my wife and son. We all loved this tasty dish. I particularly liked the contrast of the crispy outside coating and the tender juicy white clean tasting fish. The flavors blended perfectly. Will make it again.

I made this for my family last night and this dish was absolutely AWESOME!!!. It was easy to make and the fish was so tender with a crunchy outside.The fish tasted like I had used butter in the recipe but I didn't, I followed it exactly. Made me look like a rockstar in the kitchen. IF I CAN MAKE THIS RECIPE, THEN ANY HUSBAND WHO NORMALLY DOESN'T COOK CAN DO IT!!!
