How to make it

  • Grate potatoes using a coarse grater
  • If you are using rotisserie chicken, separate meat from the bones and mince the meat in the processor
  • Heat butter in a skillet over medium heat
  • Mince or finely chop shallots and saute in butter until nicely browned
  • In a large mixing bowl, combine potatoes, chicken meat, eggs, cooked shallots, salt, pepper, herbs, and cream
  • Mix well
  • Fold out the mix into a square 8" casserole dish
  • Heat the oven at 375°F
  • Place the casserole dish in the middle of the oven and cook for about 40 minutes, or until top of the dish is nicely golden-browned
  • Let stand for a few minutes after baking
  • Serve hot
