Fragrant chicken and potato bake

- 4 medium to large size potatoes, with skin shopping list
- 1/2 rotisserie chicken, or 1 lbs of raw ground chicken meat shopping list
- 4 shallots shopping list
- 2 tbsp butter shopping list
- 2 eggs shopping list
- 1 cup heavy cream shopping list
- 1 tsp salt shopping list
- 1/2 tsp ground black pepper shopping list
- 1/4 tsp each: sage, crushed rosemary or italian seasoning (optional) shopping list
How to make it
- Grate potatoes using a coarse grater
- If you are using rotisserie chicken, separate meat from the bones and mince the meat in the processor
- Heat butter in a skillet over medium heat
- Mince or finely chop shallots and saute in butter until nicely browned
- In a large mixing bowl, combine potatoes, chicken meat, eggs, cooked shallots, salt, pepper, herbs, and cream
- Mix well
- Fold out the mix into a square 8" casserole dish
- Heat the oven at 375°F
- Place the casserole dish in the middle of the oven and cook for about 40 minutes, or until top of the dish is nicely golden-browned
- Let stand for a few minutes after baking
- Serve hot
