Moms Secret Coconut Butterscotch Fudge

- 12 oz. bag butterscotch chips shopping list
- 1 cup coconut .. she used Bakers brand shopping list
- 2 cups chopped almonds shopping list
- 1 jar (7 - 8 ) marshmallow Fluff shopping list
- ........................................................ shopping list
- 1/3 cup Butter shopping list
- 1 cup evaporated milk shopping list
- 4 1/2 cups superfine sugar shopping list
- extra butter shopping list
How to make it
- In a large heavy bowl that can stand heat
- add butterscotch chips
- then the coconut
- then add the nuts
- and top with marshmallow fluff
- put in a warm spot so the chips starts to soften
- ........................................................................................
- In a heavy Pan.... butter the sides and bottom of the pan heavily
- put in 1/3 cup of butter and the evaporated milk
- heat until warm
- slowly add the sugar.. stir after each addition..
- make sure the dry sugar does not touch the sides of the pan
- don't stir too hard .. you don't want the sugar mixture all over the sides of the pan
- heat slowly until the sugar is dissolved keep stirring
- DON"T scrap the sides of the pan
- the turn the heat up to medium
- using a candy thermometer bring tempature to 225-228' F
- stir mixture to keep from burning
- pour hot sugar mixture over butterscotch mixture in the bowl
- DO NOT scrape the pot out
- use a new spoon and blend the together as quickly as possible
- DON"T over mix. there will be some streaks of the fluff thats ok
- spread mixture on a well buttered jelly roll pan.( large spatula works)
- work quickly. this fudge sets up very fast
- cover tightly with plastic wrap and then foil..
- put in a cold spot for 4 hours... cut into pieces
- ....................................................
- keep wrapped tightly.. this fudge dries out very fast...

my son would love this for sure. but I"m not making it for him! lol... well not unless I can adjust the amount of sugar, or maybe just maybe around Christmas.
