Spicy Red Beans And Rice

- 1 pound red beans soaked overnight shopping list
- 1 medium white onion chopped shopping list
- 1 bunch green onions chopped shopping list
- 7 cloves garlic chopped shopping list
- 1/2 cup parsley shopping list
- 1 rib celery chopped shopping list
- 1/2 cup ketchup shopping list
- 1 bell pepper seeded and chopped shopping list
- 1 tablespoon worcestershire sauce shopping list
- 2 tablespoons Tabasco sauce shopping list
- 2 bay leaves shopping list
- 1 teaspoon thyme shopping list
- 1/2 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 1 pound smoked sausage cut into 1" pieces shopping list
- 1 pound pickled pork rinsed and cut into cubes shopping list
- cooked rice shopping list
How to make it
- Drain beans then put in a large heavy pot and add 3 quarts fresh water.
- Cover and simmer for one hour or until beans are tender.
- Watch that the water does not boil down too far.
- The beans must be covered with water at all times.
- Add remaining ingredients except rice.
- Add more water to cover if needed.
- Simmer for 1-1/2 hours or until liquid has thickened.
- Serve over rice.
