Ingredients
  • 4-8 pieces of filet of fish
  • 2 cups blood orange juice
  • 1 cup crème fraîche or sour cream
  • 1 TBSP (approx.) of corn starch
  • 1/2 cup Armagnac
  • white pepper
  • salt
  • 2-3 white spanish onions (you may also call them'vegetable onion, i.e. it is not as spicey as the normal ones), sliced
  • 1 TBSP olive oil

Directions
  1. Preheat oven to 175° CENTIGRADE
  2. wash and pat dry fish filet
  3. pour oil into pyrex baking dish, brushing the sides, too
  4. layer as follows:
  5. filet of fish, (peppered and salted)
  6. some blood orange juice,
  7. onion rings, salt them, use pepper if you wish,
  8. some more of the juice,
  9. procede until all is used up
  10. then mix Armagnac with corn starch, pouring it over all.
  11. stick into oven.
  12. at the same time, you may want to take another pyrex or similar baking dish with cover, put needed amount of rice, salt, some butter, water, stir, cover, stick into oven. should be ready at the same time as the fish. you may want to check after 25 minutes or so...
  13. while all is getting done, you can get a salad ready, have an aperitif, enjoy the scenery, laugh with the company...it isa great dish to make for 'casual guests' in´summer. my family gets it, too. :-)
