Bang Bang Chicken

- 9 oz boneless chicken breasts and thighs shopping list
- 1 tsp scallions, shredded shopping list
- 1 tsp sesame paste shopping list
- 2 tsp chili oil shopping list
- 1 tsp sugar shopping list
- 1 TB soy sauce shopping list
- 1/8 tsp schezwan ground peppercorn shopping list
- ½ tsp sesame oil shopping list
How to make it
- Poach the chicken in boiling water to cover for 10 minutes, or until cooked. Remove, drain and let cool.
- Beat the skin side lightly to loosen the fibers with the side of a meat cleaver or a rolling pin (hence the name bang bang) Peel off the skin and tear the chicken into long strips with your fingers. Arrange the chicken strips in a dish and sprinkle with the scallion shreds.
- Mix together the sesame paste, chili oil, sugar, soy sauce, ground peppercorns and sesame oil. Pour overr the scallions and chicken and mix until coated and serve.
