Beef Dijon Recipe
A flavorful, saucy mix of beef and tomato sauce. Great over noodles and side dish of steamed green beans and salad.

Ingredients
  • 2-lbs. boneless beef chuck or round, 3/4 in cubes
  • 1 med. onion, chopped
  • 2 stalks celery, finely chopped
  • 1 lg clove of garlic, minced
  • 1 Tbs. oil
  • 2 Tbs. flour
  • 1/2 tsp. dried thyme leaves
  • 1/2 cup tomato puree
  • 1 Tbs. Dijon mustard
  • 1/2 cup wine or beef broth

Directions
  1. Trim meat of any excess fat. In a heavy 3 quart saucepan, saute the onion, celery and garlic in oil until slightly softened.
  2. Add the meat and a little oil. Cook over medium hat, uncovered for 20 minutes, stirring often.
  3. Sprinkle with flour. Cook another 20 minutes.
  4. Add thyme, tomato puree, mustard and water to cover the meat, 1 to 1 1/2 cups.
  5. Bring to a boil. Lower heat.
  6. Simmer for 1 hour to 1 hour 20 minutes or until meat is tender.
  7. Stir in wine or broth. Season with salt and pepper.
  8. Serve over rice, mash potatoes or noodles.
