Ingredients

2-lbs. boneless beef chuck or round, 3/4 in cubes

1 med. onion, chopped

2 stalks celery, finely chopped

1 lg clove of garlic, minced

1 Tbs. oil

2 Tbs. flour

1/2 tsp. dried thyme leaves

1/2 cup tomato puree

1 Tbs. Dijon mustard

1/2 cup wine or beef broth

Directions

Trim meat of any excess fat. In a heavy 3 quart saucepan, saute the onion, celery and garlic in oil until slightly softened.

Add the meat and a little oil. Cook over medium hat, uncovered for 20 minutes, stirring often.

Sprinkle with flour. Cook another 20 minutes.

Add thyme, tomato puree, mustard and water to cover the meat, 1 to 1 1/2 cups.

Bring to a boil. Lower heat.

Simmer for 1 hour to 1 hour 20 minutes or until meat is tender.

Stir in wine or broth. Season with salt and pepper.

Serve over rice, mash potatoes or noodles.

I cooked this last night as to what I had on hand and it turned out fab! 1 lb. ground beef and 1 lb. fresh quartered baby bella mushrooms - diced tomatoes instead of puree - and basil as my herb. I served it over whole wheat rigatoni and a side of fresh steamed spinach. YUM! Everyone loved it.
