Beef Dijon

- 2-lbs. boneless beef chuck or round, 3/4 in cubes shopping list
- 1 med. onion, chopped shopping list
- 2 stalks celery, finely chopped shopping list
- 1 lg clove of garlic, minced shopping list
- 1 Tbs. oil shopping list
- 2 Tbs. flour shopping list
- 1/2 tsp. dried thyme leaves shopping list
- 1/2 cup tomato puree shopping list
- 1 Tbs. Dijon mustard shopping list
- 1/2 cup wine or beef broth shopping list
How to make it
- Trim meat of any excess fat. In a heavy 3 quart saucepan, saute the onion, celery and garlic in oil until slightly softened.
- Add the meat and a little oil. Cook over medium hat, uncovered for 20 minutes, stirring often.
- Sprinkle with flour. Cook another 20 minutes.
- Add thyme, tomato puree, mustard and water to cover the meat, 1 to 1 1/2 cups.
- Bring to a boil. Lower heat.
- Simmer for 1 hour to 1 hour 20 minutes or until meat is tender.
- Stir in wine or broth. Season with salt and pepper.
- Serve over rice, mash potatoes or noodles.
