How to make it

  • Trim meat of any excess fat. In a heavy 3 quart saucepan, saute the onion, celery and garlic in oil until slightly softened.
  • Add the meat and a little oil. Cook over medium hat, uncovered for 20 minutes, stirring often.
  • Sprinkle with flour. Cook another 20 minutes.
  • Add thyme, tomato puree, mustard and water to cover the meat, 1 to 1 1/2 cups.
  • Bring to a boil. Lower heat.
  • Simmer for 1 hour to 1 hour 20 minutes or until meat is tender.
  • Stir in wine or broth. Season with salt and pepper.
  • Serve over rice, mash potatoes or noodles.
