How to make it

  • Peel and trim your beets and celariac or parsnips iinto large squares, and save the trim
  • dice the large squares into cubes 1/2 inch on a side set aside all your cubes
  • pit your chopped veg, trimmings and seasonings in a large stock pot and add the gallon of water, simer gently untill the veg is very soft and pour through a fine sieve retaining the stock,
  • discard the veg
  • add your cubes and gently simmer them untill they are tender salt to taste and serve with a dollop of sour cream or yogurt
