Super Easy Borscht

- 1 1/2 pounds beets shopping list
- 1 pound parsnips or celariac shopping list
- 1/2 head celery chopped or celariac trim (will explain in method) shopping list
- 1-2 med onions chopped shopping list
- 1 pound carrots chopped shopping list
- 1 gallon water shopping list
- black peppercorns whole shopping list
- 2 bay leaves shopping list
- yoghurt or sour cream for garnish shopping list
How to make it
- Peel and trim your beets and celariac or parsnips iinto large squares, and save the trim
- dice the large squares into cubes 1/2 inch on a side set aside all your cubes
- pit your chopped veg, trimmings and seasonings in a large stock pot and add the gallon of water, simer gently untill the veg is very soft and pour through a fine sieve retaining the stock,
- discard the veg
- add your cubes and gently simmer them untill they are tender salt to taste and serve with a dollop of sour cream or yogurt
