Swiss Mushroom Chicken

- 4 Boneless, Skinless, Breast Halves shopping list
- 1 egg shopping list
- 1 Cup (about 25) Ritz or other butter flavored crackers Crushed shopping list
- 3/4 teaspoon salt shopping list
- 1/2 Pound Fresh, Sliced, mushrooms shopping list
- 2 Tablespoons butter (Divided) shopping list
- 4 Slices ham or salami shopping list
- 4 Slices swiss cheese shopping list
How to make it
- Flatten Breast Halves to 1/4 inch Thickness
- In a Shallow Bowl, Lightly Beat Egg.
- Combine Cracker Crumbs & Salt in Another Shallow Bowl.
- Dip Chicken in Egg, then in Crumbs; Set Aside.
- In a Large Ovenproof Skillet, Saute Mushrooms in Butter until
- Tender; Remove & Set Aside.
- In Same Skillet Melt Remaining Butter, Add Chicken, Cook over
- Medium High Heat for 3 to 4 minutes on each side, or until
- juices run Clear.
- Top Each Breast Halve with a Ham Slice, Mushrooms, & Cheese
- Slice. BROIL: 4 Inches from Heat for 1 to 2 Minutes, or Until
- Cheese is Melted
