Ingredients
  • 4 Boneless, Skinless, Breast Halves
  • 1 Egg
  • 1 Cup (about 25) Ritz or other Butter Flavored Crackers Crushed
  • 3/4 teaspoon Salt
  • 1/2 Pound Fresh, Sliced, Mushrooms
  • 2 Tablespoons Butter (Divided)
  • 4 Slices Ham or Salami
  • 4 Slices Swiss Cheese

Directions
  1. Flatten Breast Halves to 1/4 inch Thickness
  2. In a Shallow Bowl, Lightly Beat Egg.
  3. Combine Cracker Crumbs & Salt in Another Shallow Bowl.
  4. Dip Chicken in Egg, then in Crumbs; Set Aside.
  5. In a Large Ovenproof Skillet, Saute Mushrooms in Butter until
  6. Tender; Remove & Set Aside.
  7. In Same Skillet Melt Remaining Butter, Add Chicken, Cook over
  8. Medium High Heat for 3 to 4 minutes on each side, or until
  9. juices run Clear.
  10. Top Each Breast Halve with a Ham Slice, Mushrooms, & Cheese
  11. Slice. BROIL: 4 Inches from Heat for 1 to 2 Minutes, or Until
  12. Cheese is Melted
