How to make it

  • Finely chop garlic, rosemary, sage,bay leaves, two good pinches of salt and black pepper together. Put some of this mix (called 'battuto' in Italian) inside the meat. Rub the loin of pork with the remaining herb mix and some olive oil. Roast in the oven at 200 C for about 1 and a half hour. Serve sliced with its own juice and rocket or fresh salad.     Simple, rustic, and like all traditional Tuscan-Italian dishes, very few ingredients (so you'd best use good-quality ones LOL!) TY, MoltoBuono :)
