Alabama Cornbread Recipe
Here's some cornbread to go with your hearty winter soup, chili or stew.

Ingredients
  • 4 tablespoons vegetable or canola oil, divided
  • 2 cups cornmeal
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 1/2 cups buttermilk

Directions
  1. Preheat oven to 425 degress;
  2. Using 2 tablespoons of oil, and a paper towel, grease the bottom and sides of a 9 or 10 inch cast-iron skillet; put skillet in the oven to heat up;
  3. Mix cornmeal, baking powder and salt in a medium bowl; add beaten egg, buttermilk and remaining two tablespoons of oil;
  4. Stir until just combined;
  5. Remove the hot skillet from the oven - careful!
  6. Pour the batter into the hot pan (hear the sizzle!)
  7. Bake until the bread is golden and firm to the touch, about 20 minutes;
  8. Let stand for 5 minutes before slicing;
  9. Best served warm with real butter.
