Pecan Crusted Catfish With A Peach Sour Mash Recipe
Thsi is a southern favorite with a twist. Catfish dredged through pecans and then sautee to golden perfection served with a peach mash.

Ingredients
  • Peach Mash:
  • 2tsp. butter
  • 1/4 cup brown sugar
  • 2 cups frozen peaches thawed
  • 1/4 cup peach schnapps
  • 1/4 tsp nutmeg
  • 1/4 tsp. cinnamon
  • Catfish:
  • 4 filets boneless skinless catfish
  • 1 cup flour
  • 2 tsp salt
  • 1 tsp black pepper
  • 4 eggs
  • 1/4 cup buttermilk
  • 1/2 cup bread crumbs
  • 1/2 cup ground pecans
  • 3 tbs. butter
  • 3 tbs. of olive oil

Directions
  1. Heat a sautee pan on medium high heat add 2 tbs. butter till melted add brown sugar till melted. Add peach schnapps reduce for 3 minutes. Add peaches and simmer for 5 minutes. Add cinnamon & nutmeg continue to reduce till thickened.
  2. Combine flour salt & pepper in bowl.
  3. Beat eggs & buttermilk in another bowl.
  4. Combine bread crumbs & pecans in another dish. Now you have your 3 step breading station ready.
  5. Heat 3 tbs. ob butter and 3 tbs. of olive oil in sautee pan medium high heat.
  6. Dredge catfish through flour mix, then egg mix and the pecan mix.
  7. Sautee for 4-5 minutes on each side or until deep golden brown.
