Stuffed Baked Sweet Potatoes

- 6 medium orange fleshed sweet potatoes shopping list
- 1/2 cup orange juice shopping list
- 3 tablespoons butter shopping list
- 1 teaspoon salt shopping list
- 8 ounce can crushed drained pineapple shopping list
- 1/2 cup chopped pecans shopping list
How to make it
- Bake potatoes at 375 for 1 hour.
- Cut a 1 inch lengthwise strip from top of each potato and scoop pulp from shell.
- Combine pulp, orange juice, butter and salt then gently stir in pineapple.
- Stuff shells with mixture and sprinkle with pecans.
- Bake at 375 for 10 minutes.
