How to make it

  • Bake potatoes at 375 for 1 hour.
  • Cut a 1 inch lengthwise strip from top of each potato and scoop pulp from shell.
  • Combine pulp, orange juice, butter and salt then gently stir in pineapple.
  • Stuff shells with mixture and sprinkle with pecans.
  • Bake at 375 for 10 minutes.
