How to make it

  • Scrub potatoes then cut each in half.
  • Place in microwave safe casserole dish with the water and microwave covered for 5 minutes stirring once.
  • Drain and cool slightly.
  • In medium bowl combine mayonnaise, broth, Italian seasoning and garlic powder.
  • Add potatoes and toss to coat.
  • Cover and chill in refrigerator for at least 1 hour.
  • Thread potatoes onto 4 long skewers leaving 1/4 inch between pieces.
  • Grill kabobs on uncovered grill directly over medium coals 14 minutes turning occasionally.

    You could probably do them under a broiler. I bet they would work just as well.
