Ribeye Steaks With Whisky Sauce Recipe


RIBEYE STEAKS WITH WHISKY SAUCE Recipe

This is an unusual idea but it works well. I prefer bone-in ribeyes 1" thick but, any tender cut will do well. Weather permitting, I prefer to grill the steaks.

Ingredients
  • 4 1" bone-in ribeye steaks
  • 1 tablespoon butter
  • 1/4 cup chopped shallots
  • 4 ounce fresh blueberries
  • 1/4 cup whiskey
  • 3/4 cup grape juice
  • 2 tablespoon lemon juice
  • 1 tablespoon Honey-Dijon sauce
  • 2 teaspoon cornstarch
  • 1/5 cup water
  • salt and freshly ground black pepper to taste

Directions
  1. In a cast iron skillet, heat the butter, saute the shallots and blueberries.
  2. Cook over medium heat until shallots soften.
  3. Add whiskey and keep your face at a safe distance in case the pan flashes.
  4. Stir in grape juice, lemon juice and Honey-Dijon sauce.
  5. Heat until boiling.
  6. Dilute cornstarch with water and stir into sauce; cook until thickened and set aside.
  7. Broil (or grill 7 minutes per side for medium rare) the steaks to the desired doneness and serve with the sauce.
