Ingredients
  • 1 package yellow cake mix
  • 15-1/4 ounce can crushed pineapple drained well
  • 15 ounce can sweet potato pieces drained and mashed
  • 1-1/3 cups water
  • 3 large eggs
  • 2 tablespoons vegetable oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • Frosting:
  • 8 ounce package cream cheese softened
  • 3 tablespoon butter
  • 16 ounce box powdered sugar
  • 1 teaspoon vanilla extract

Directions
  1. Preheat oven to 350.
  2. Grease and flour 3 round cake pans then set aside.
  3. Place all cake ingredients in large mixing bowl and beat at low speed for 3 minutes.
  4. Distribute batter evenly between cake pans.
  5. Bake for 25 minutes.
  6. Cool in pans on wire racks 10 minutes before removing from pans then cool completely on wire racks.
  7. Make frosting by beating cream cheese and butter at medium speed until creamy.
  8. Gradually add powdered sugar beating until smooth.
  9. Add vanilla and beat until well blended.
  10. Frost between cooled cake layers, on top and down sides of cake.

Hi Meow. I want to try this cake to use up some sweet potato cubes I have. They are raw and I would cook and mash them. But how much sweet potato do you think you get from the can once it is mashed? 1 cup? 2 cup?
