Sweet Potato Cake Recipe

How to make it

  • Preheat oven to 350.
  • Grease and flour 3 round cake pans then set aside.
  • Place all cake ingredients in large mixing bowl and beat at low speed for 3 minutes.
  • Distribute batter evenly between cake pans.
  • Bake for 25 minutes.
  • Cool in pans on wire racks 10 minutes before removing from pans then cool completely on wire racks.
  • Make frosting by beating cream cheese and butter at medium speed until creamy.
  • Gradually add powdered sugar beating until smooth.
  • Add vanilla and beat until well blended.
  • Frost between cooled cake layers, on top and down sides of cake.

    Hi Meow. I want to try this cake to use up some sweet potato cubes I have. They are raw and I would cook and mash them. But how much sweet potato do you think you get from the can once it is mashed? 1 cup? 2 cup?
