Sweet Potato Cake

- 1 package yellow cake mix shopping list
- 15-1/4 ounce can crushed pineapple drained well shopping list
- 15 ounce can sweet potato pieces drained and mashed shopping list
- 1-1/3 cups water shopping list
- 3 large eggs shopping list
- 2 tablespoons vegetable oil shopping list
- 1 teaspoon ground cinnamon shopping list
- 1/2 teaspoon ground nutmeg shopping list
- 1 teaspoon vanilla extract shopping list
- Frosting: shopping list
- 8 ounce package cream cheese softened shopping list
- 3 tablespoon butter shopping list
- 16 ounce box powdered sugar shopping list
- 1 teaspoon vanilla extract shopping list
How to make it
- Preheat oven to 350.
- Grease and flour 3 round cake pans then set aside.
- Place all cake ingredients in large mixing bowl and beat at low speed for 3 minutes.
- Distribute batter evenly between cake pans.
- Bake for 25 minutes.
- Cool in pans on wire racks 10 minutes before removing from pans then cool completely on wire racks.
- Make frosting by beating cream cheese and butter at medium speed until creamy.
- Gradually add powdered sugar beating until smooth.
- Add vanilla and beat until well blended.
- Frost between cooled cake layers, on top and down sides of cake.
