How to make it

  • In a mixing bowl, sift together the flour, sugar,
  • baking powder and salt; cut in the shortening.
  • In another bowl, combine the milk and cherry juice;
  • add 3/4-cup milk mixture to flour mixture.
  • Add flavorings; beat for 200 strokes, scraping bowl frequently with spoon.
  • Add remaining milk mixture and egg whites; beat for 200
  • strokes or with an electric mixer.
  • Add the cherries and walnuts; mix well.
  • Pour into 2 greased and floured 9-inch cake pans.
  • Bake in preheated 375-degree oven for 20 to 25 minutes; cool. Remove from pans; frost with Pink Valentine Frosting.
  • Pink Valentine Frosting:
  • In a mixing bowl, combine the shortening, butter,
  • vanilla, almond extract and salt; blend well.
  • Beat in 1/2-cup sugar.
  • Add the cream alternately with the remaining sugar, beating well after each addition; add only enough cream to make it spreading consistency.
  • Add enough food coloring to tint to a delicate pink.

    This is perfect. Was just thinking the other day of something to make this year. Last year for Valentine's, I was so busy ended up getting a store bought cake and felt sooo guilty about it. My family is used to homemade goodies. Won't let that happen this year. Thanks for a great post and just in time.
