Buckwheat Pancakes Recipe
Buckwheat isn't even a wheat, but it does make a great addition to a pancake recipe. These rise up nice and fluffy. You gotta use real maple syrup!

Ingredients
  • ½ c. white flour
  • ¾ c. buckwheat flour
  • 1 tsp baking powder
  • 2 tsp sugar
  • 1 egg, lightly beaten
  • 1 c. milk
  • 1 T oil
  • 1 tsp vanilla
  • 1 tsp cinnamon

Directions
  1. Blend the ingredients in the order given.
  2. Don't over-mix the batter.
  3. Preheat your frying pan or pancake griddle with some oil.
  4. Cook one side until air pockets start to show.
  5. Flip them over and cook another 2-3 minutes, being careful not to burn them.
  6. Serve with real maple syrup.

Would whole wheat flour be okay? Also, do you think these would turn out okay if I used two egg whites instead of a whole egg? I love buckwheat pancakes but I'm looking for a lower fat version. These look like just do it.


You could definitely use whole wheat, and yes, substitute 2 egg whites for the egg - lower cholesterol and all! You remind me to post a banana pancake recipe I have that has no eggs in them at all. I sometimes wonder if an egg is really necessary for a pancake batter at all!


Oh please do! I love bananas in anything!
