Kale With Garlic And Cranberries Recipe
Another recipe I found in the newspaper; going to try this week (originally from "Joy of Cooking")

Ingredients
  • 2 lbs. kale, stems & center ribs discarded, leaves coarsely torn
  • 1 tbsp. minced garlic
  • 5 tbsp. olive oil
  • 1/2 cup dried cranberries
  • 3/4 tsp. salt
  • 1/8 tsp. pepper

Directions
  1. In 6-qt. pot of boiling water, cook kale, uncovered, until almost tender (5-7 minutes)
  2. Drain, transfer to cold water bath so stops cooking
  3. When cool, drain - do not squeeze
  4. In same pot, over medium heat, cook garlic in oil, until fragrant
  5. Add kale, dried cranberries, salt and pepper, tossing frequently, until kale tender 4-6 minutes
