This recipe uses Carob powder and Carob chips which may be purchased at your local health food store.

Ingredients
  • 2 sticks butter, softened
  • 4 Tablespoon water
  • 1 teaspoon rum extract
  • 1/2 teaspoon vanilla extract
  • 6 Tablespoon carob powder
  • 3/4 cup unsweetened carob chips
  • 1-1/2 cups granulated sugar
  • 4 cups rolled oats
  • powdered sugar, as needed, for rolling
  • sweetened flaked coconut, as needed, for rolling
  • chopped walnuts, as needed, for rolling

Directions
  1. Cream butter and sugar together. Mixture should be light and fluffy.
  2. Add water, rum, and vanilla and combine.
  3. Add carob powder, chip, and oats. Mix well.
  4. Roll into small balls. If dough is not sticking together well, splash a little water on it.
  5. If desired, roll in chopped walnuts, or confectioner's sugar, or coconut, or a combination of all three.

Dari what exactly is carob?


Actually, its an Eastern Mediteranian evergreen tree that has edible pods. The pods are used to make carob powder and carob chips. The pod itself actually contains a very sweet-tasting pulp like middle.


Better add this, once the Carob powder and chips have actually been made, they have a taste very similar to that of chocolate.

Alterations


You may also use chocolate chips and cocoa powder in place of the carob chips and carob powder. Although, I have NEVER personally used the alternative.
