Fish with tomato parsley and lemon Pesce all acqua pazza

- 4 tblspns extra virgin olive oil shopping list
- 2 garlic cloves in large dice shopping list
- 4 tblspns Italian parsley, finely chopped shopping list
- 500g very ripe cherry tomatoes, chopped shopping list
- 1 lemon, sliced shopping list
- salt shopping list
- 900g white fish (orange roughy, bass, cod) (strong flavour, my interpretation) shopping list
How to make it
- Place the olive oil and garlic in a skillet large enough to receive th fish
- Cook on medium heat
- As soon as the garlic starts colouring, remove the garlic and let the oil cool
- Add about 1cm water
- Add half the parsley and the lemon
- Add tomatoes
- Add the fish slices
- Top with the rest of the parsley
- Season with salt
- Place the skillet back on the stove on medium heat and bring to a boil
- Cook for about 10-15 mins, turning the fish once to cook on both sides
- Make sure fish is only half covered by the water
- Adjust salt, add pepper if necessary
- Serve warm
