How to make it

  • Place the olive oil and garlic in a skillet large enough to receive th fish
  • Cook on medium heat
  • As soon as the garlic starts colouring, remove the garlic and let the oil cool
  • Add about 1cm water
  • Add half the parsley and the lemon
  • Add tomatoes
  • Add the fish slices
  • Top with the rest of the parsley
  • Season with salt
  • Place the skillet back on the stove on medium heat and bring to a boil
  • Cook for about 10-15 mins, turning the fish once to cook on both sides
  • Make sure fish is only half covered by the water
  • Adjust salt, add pepper if necessary
  • Serve warm
