Fish With Tomato Parsley And Lemon Pesce All Acqua Pazza Recipe
A great Italian classic, good for dinner parties

Ingredients
  • 4 tblspns extra virgin olive oil
  • 2 garlic cloves in large dice
  • 4 tblspns Italian parsley, finely chopped
  • 500g very ripe cherry tomatoes, chopped
  • 1 lemon, sliced
  • salt
  • 900g white fish (orange roughy, bass, cod) (strong flavour, my interpretation)

Directions
  1. Place the olive oil and garlic in a skillet large enough to receive th fish
  2. Cook on medium heat
  3. As soon as the garlic starts colouring, remove the garlic and let the oil cool
  4. Add about 1cm water
  5. Add half the parsley and the lemon
  6. Add tomatoes
  7. Add the fish slices
  8. Top with the rest of the parsley
  9. Season with salt
  10. Place the skillet back on the stove on medium heat and bring to a boil
  11. Cook for about 10-15 mins, turning the fish once to cook on both sides
  12. Make sure fish is only half covered by the water
  13. Adjust salt, add pepper if necessary
  14. Serve warm
