How to make it

  • Cut bacon into 6 pieces
  • In skillet, fry bacon until crisp
  • Drain on paper towel
  • In small bowl, add dry mustard to cream, stir
  • In each of 6 small ramekins, add 1 tablespoon of cream/mustard
  • On top of this add some green chilies
  • Break 1 egg on top of green chilies
  • Season with salt, pepper, sprinkle of cayenne
  • Put a dab, about 1 teaspoon of butter on top of this
  • Place 1 piece of cooked bacon on top of this
  • Cover the baking dishes with foil
  • Place them on a cooking sheet or in pan
  • Bake at 375 degrees for about 10 minutes or until the eggs are set
