How to make it

  • In a large bowl, combine mayonnaise, vinegar, mustard, sugar, salt and pepper
  • Add elbows, celery, green or red pepper and onion; toss to coat***
  • Cover; chill to blend flavors
  • ***Tuna Macaroni Salad - Add 1 can (6 oz.) tuna, drained and flaked
  • ***Shrimp Macaroni Salad - add 1/2 lb. cooked, cleaned small shrimp

    Very good classic macaroni salad recipe. I tweaked it just a bit and used 2 cups of dry elbows and I used a little less mayo, about 1/2 cup. I like purple onion in recipes to add color when raw onion is called for in salads and did for this recipe too and added a little diced carrot for a 'pop' of orange color. I like this recipe because it's not swimming in mayonnaise nor does it use a lot of sugar.
