This is an interesting dip or spread.

Ingredients
- 1 Tbsp. butter
- 2 - 12 oz. pkgs. fresh mushrooms, finely chopped
- 1 medium onion, finely chopped
- 30 oz. frozen, chopped spinach, thawed and squeezed completely dry
- 8 oz. softened cream cheese
- 1 cup sour cream
- 1 cup mayonnaise
- a drop or 2 of Tobasco sauce or any other hot sauce
- salt & pepper to taste
- 1 Tbsp. lemon juice, approximately
- Optional: Fresh grated parmesan cheese
Directions
- Brush off any dirt from mushrooms and chop finely.
- Sauté onion and mushrooms in 1 Tbsp, butter until soft and all liquid is absorbed,
- Mix in a large bowl:
- 30 oz. frozen. chopped spinach, thawed and squeezed of any liquid
- 8 oz softened cream cheese
- 1 cup sour cream
- 1 cup mayonnaise
- Tobasco sauce
- salt & pepper to taste
- approximately 1 Tbsp. lemon juice
- 1/2 - 3/4 cup parmesan cheese (optional)
- add sautéed onions and mushrooms
- Place this mixture in a lightly greased souffle dish and heat in the oven at 350 degrees F for about 30 minutes.
- Serve warm as a dip with crackers, toast / pita points or bread chunks.
- You can use this mixture to fill puff pastry shells, or as a spread for sandwiches and paninis.
- This dip / spread can be frozen for a couple of months.
- *I like to give this a whiz around in the blender or food processor if I am serving it as a dip.
