Ingredients
  • 3 pounds carrots, peeled and sliced
  • 3 cups water
  • 1 1/2 tsp salt
  • 2 tbsp butter
  • 2 tbsp honey
  • 2 tbsp lime juice
  • 1 tbsp grated lime peel
  • 1 tbsp grated ginger root
  • lime slices

Directions
  1. Cook carrots for 10 minutes in 3 cups salted water. Drain.
  2. Heat butter, honey, lime juice, peel and ginger in a saucepan for 5 minutes.
  3. Pour glaze over carrots and stir until well glazed.
  4. Put carrots in serving dish and garnish with lime slices.
