Pepperoni Spaghetti Recipe
This is perfect for a quick meal when you are hungry but not in the mood for a heavy pasta sauce. By the time you pour wine, make a simple salad and set the table, dinner is done!

Ingredients
  • 4 ounces sliced pepperoni
  • 1/2 cup sweet onion, chopped
  • 1 to 2 cloves garlic, minced (optional)
  • 1/2 cup green pepper, cut in strips
  • 8 ounces spaghetti, cooked and drained
  • 1/2 cup Parmesan cheese, shredded
  • 1/2 cup Mozzarella cheese, shredded
  • 1/2 cup fresh tomato, seeded and diced
  • 1/2 teaspoon dried oregano
  • Additional Parmesan for serving.

Directions
  1. In large skillet, saute pepperoni until edges begin to curl.
  2. Add onion and green pepper. Cook until vegetables are tender-crisp. Add garlic and saute 30 to 60 seconds.
  3. Add spaghetti, cheeses, tomato and oregano.
  4. Heat through.
  5. Serve with additional Parmesan for sprinkling.
