How to make it

  • Melt butter in skillet on low heat
  • Sautee garlic in butter on low heat for about 4 minutes
  • Add preserves
  • cook about 2-3 more minutes until preserves melt
  • pour over cooked fish
  • heavenly

    you can use olive oil instead of butter too. I have been cutting back on "bad" thing lately and have been subing oliveoil for butter and it is quite good.

    I use peach or apricot preserves or orange marmalade. Mango chutney is excellent too. I always serve this with a white, salt-water fish, dredged in breadcrumbs then pan-fried in a little olive oil. Quick easy and fantastic!
