ALMOST LASAGNA IN THE CROCK POT This recipe came from an estate sale. I obtained it when I purchased the family collection from the Miller Estate in Quinlan, Texas in 1987.

Ingredients
  • 1 box rotini pasta
  • 2 jars pasta sauce with tomato chunks
  • 1 egg
  • 1/2 pound lean ground beef
  • 1/2 pound ground sausage
  • 2 tablespoons olive oil
  • 1 cup parmesan cheese
  • 1/2 cup Italian breadcrumbs
  • 2 cups mozzarella cheese
  • 16 ounce container ricotta cheese
  • 2 eggs
  • 1 cup parmesan cheese
  • 1-1/2 teaspoons parsley flakes
  • 1/2 teaspoon salt
  • 1 teaspoon freshly ground black pepper

Directions
  1. Grease crock pot or spray with non stick cooking spray.
  2. Cook rotini according to package directions then drain well.
  3. Brown beef and sausage and drain well.
  4. Toss pasta with olive oil then add pasta sauce to mixture and toss well.
  5. Stir together parmesan cheese, breadcrumbs, egg, 1 cup mozzarella and browned meat.
  6. Beat together ricotta, eggs, parmesan, parsley, salt and pepper.
  7. Pour half of pasta then sauce into crock pot.
  8. Spread entire ricotta mixture over first layer of pasta.
  9. Cover ricotta layer with remaining pasta mixture and cover with remaining cheese.
  10. Cover and cook on low for 6 hours.
