Traditional Rice Custard

- 3 eggs shopping list
- 1/3 cup caster sugar shopping list
- 1 tspn vanilla essence shopping list
- 2 1/2 cups milk shopping list
- 1/2 cup cooked rice shopping list
- ground cinnamon/ nutmeg shopping list
- You can also add sultanas if desired... but sultanas arent a favourite of min so i prefer it without them... shopping list
- 1/4 cup sultanas shopping list
How to make it
- Whisk eggs, sugar, essence and milk in medium bowl.
- Stir inrice and sultanas.
- Pour mixture into 4 ovenproof dishes ( 1 cup capacity).
- Place dishes into baking dish, add enough water to come halfway up sides of dishes.
- Bake in moderate oven for 35 mins.
- Sprinkle custard lightly with cinnamon, bake further 15 minutes or until just set.
- Serve warm or cold with ice-cream, if desired.

Love rice custard or rice pudding! Grew up on this wonderful, comforting dessert. Even love it for breakfast. Good recipe.
