How to make it

  • In mortar, mix egg yolk, salt, parsley, thyme, garlic
  • to make a paste
  • beat egg yolk,
  • mix with paste
  • dip fish fingers in the mixture,
  • fry in olive oil until crips and golden brown - should take max. 3-5 minutes on each side, depending on thickeness of filet
  • i serve these with a salad made of corn, pineapple, very small cubes of gouda, some cut-up olives, and some rucola and with a freshly made mayonais. hmmm. you may want to add some sections of orang, too, if you can 'de-skin' them properly. :-) i do have some problems with that and the pretty sections of orange often come out in just pieces of.. tastes good all the same.

    Love fish and the post. One question does come to mind though: Do the fish have fingers in your neck of the woods?? And what about fingerprints?? Just fooling. Thanks, looking forward to trying this. The flavors look great.
