Easy Clam Chowder in the Crockpot

Ingredients
  • 6 Slices of Bacon, diced
  • 2 Onions, chopped
  • 5 Cans (6.5 oz each) Clams, drained *reserve liquid
  • 6 Medium Potatoes, cubed, peeled-if you prefer
  • 2 T Garlic, minced
  • 1 tsp Black Pepper
  • 2 - 12oz Cans Evaporated Milk
  • Salt, to taste
  • Water

Directions
  1. In medium skillet, cook bacon and onions until onions are tender
  2. Place drained, cooked bacon in Crockpot
  3. Add enough water to reserved clam juice to make 3 Cups
  4. Pour into Crockpot
  5. Add potatoes, garlic and pepper (salt optional) to Crockpot
  6. Cover and cook on LOW 7 Hours
  7. Mix in Clams and 2 cans of milk
  8. Cover and cook on LOW additional 30-45 minutes.
  9. (adjust seasoning if necessary)
