  • DIRECTIONS:
  • 1. In a large resealable plastic bag, add the olive oil, lime juice, garlic, oregano and salt. Seal the bag and shake ingredients until they are well mixed. Sample the marinade to test for tartness. If it is too tart, add a bit more oil. If you would rather have a bit more zing, add some more lime. The garlic and salt flavors should not be overpowering but should be up front. Place the tenderloins in the bag, seal, and thoroughly coat. Place sealed bag in the refrigerator and marinate for 2-5 hours.
  • 2. Pre-heat the grill to a medium heat.
  • 3. Brush the grate lightly with oil and discard remaining marinade. Grill the tenderloins for 20-30 minutes (or to desired doneness) only turning once.
